Lemon Curd Tart with Whipped Mascarpone Cream

A bright flavorful treat for the whole family to enjoy this spring season!

First off, mix the tart dough until just combined and chill for at least 45 minutes.

Then, roll out the dough until  about 1/4 of an inch thick and form to your tart pan.

Using a fork, poke holes onto the base and chill for an additional 20 minutes.

Fill tart pan with pie weights and bake for 20 minutes before removing and baking unitl light brown.

Once cooled, fill halfway with whipped mascarpone and spread evenly with a spatula.

Then add lemon curd and allow to set in the fridge.

Decorate with lemon wheels, raspberries and powdered sugar before enjoying!
