WHITE CHOCOLATE HIBISCUS MACARONS

Hibiscus has and always will be one of my very favorite flavors to incorporate into baked goods.

Its flavor characteristics have a tart, almost-cranberry like flavor, and the color is absolutely stunning.

INGREDIENTS:

Granulated Sugar Almond Flour Confection’s Sugar Gel Food Coloring Dried Hibiscus Powder Heavy Cream

Step 1

Add cream and hibiscus leaves to a saucepan and bring to a boil. Immediately remove from heat, cover and allow to infuse for one hour.

Step 2

Strain the infused cream through a cheesecloth, squeezing the leftover hibiscus in order to extract all the infused cream.

Step 3

Weigh the cream again to make sure you still have a total of 100g.

Step 4

Add infused cream & glucose to a saucepan and bring to a slight boil.
