  • 1.5 lbs Apricots chopped
  • ½ cups Granulated Sugar
  • 1 Lemon zested & juiced
  • 1.5 teaspoon Vanilla extract Vanilla bean paste

Instructions

  • Combine apricots, sugar, lemon zest, and lemon juice in a large heavy-bottomed pot and allow the apricots to slowly macerate/release their juices for about an hour.
    1.5 lbs Apricots, ½ cups Granulated Sugar, 1 Lemon
  • Place the pot over medium heat and simmer the ingredients for 8-10 minutes, stirring throughout this time frame.
  • Remove the preserves from the heat and add vanilla, stirring to combine.
    1.5 teaspoon Vanilla extract
  • Allow to cool and store in an airtight container.
