Cookies

  • 2 cups All-purpose flour
  • 2 teaspoons Baking Powder
  • ¼ teaspoon Kosher Salt
  • ½ cup Unsalted Butter room temperature
  • 1 cup Sugar
  • 2 tablespoons Key lime zest
  • 1 Egg room temperature
  • 1 teaspoon Vanilla extract or vanilla paste
  • 1 tablespoon Lime juice

Glaze Ingredients

  • 1 cups Powdered sugar
  • ½ teaspoon Vanilla paste or extract
  • 2 tablespoons Key lime juice
  • Lime zest for garnish
  • teaspoon Citric acid

Instructions

Key Lime Cookies

  • Preheat your oven to 350°F while you begin making the cookie dough.
  • Whisk together the flour, baking powder, and salt and set aside. Cream the butter and sugar and lime zest in a mixing bowl and beat until smooth. Add the egg, vanilla, lime juice and key lime zest. Stir to combine. Finally, add the dry ingredients and mix until combined.
    2 cups All-purpose flour, 2 teaspoons Baking Powder, ¼ teaspoon Kosher Salt, ½ cup Unsalted Butter, 1 cup Sugar, 2 tablespoons Key lime zest, 1 Egg, 1 teaspoon Vanilla extract or vanilla paste, 1 tablespoon Lime juice
  • Scoop into 1 tablespoon balls and gently roll them smooth between your hands. Place on a parchment paper-lined baking sheet.
  • Bake for 10 minutes - you'll see that the cookies have not browned or developed any color! Remove the baking sheet from the oven, allow to cool for a few minutes and then transfer the cookies onto a wire rack to cool completely before glazing.

Key Lime Glaze & Garnish

  • Pour the key lime juice into the powdered sugar, gently whisking as the glaze comes together. Too thick for your liking? Add more juice. Too thin? Add a tablespoon of powdered sugar! Then dunk the top of each cooled cookie into the glaze, letting the excess gently drip off and set on the wire rack.
    1 cups Powdered sugar, ½ teaspoon Vanilla paste or extract, 2 tablespoons Key lime juice
  • Combine zest with citric acid and add to the top of each cookie (if serving immediately).
    Lime zest for garnish, ⅛ teaspoon Citric acid
  • Allow the glaze to set completely. If you're looking to store the cookies, they should keep well at room temperature for a few days, or in the freezer for up to two months in an airtight container, then garnish when enjoying!

  • Invest in a kitchen scale. Accurate measurement of ingredients is crucial in baking. Use a kitchen scale for precise measurements or use the scoop & sweep method to ensure consistency.
  • Softened butter and eggs at room temperature will incorporate better with other ingredients, resulting in a smoother dough and better cookie texture.
  • Chill dough if necessary. If your dough is too soft or sticky to handle, chilling it in the fridge for 30 minutes to an hour will make it easier to work with.
  • Use the right baking sheet. Choose a light-colored baking sheet with a non-stick surface for even browning and to prevent sticking. Dark or non-stick baking sheets can cause the bottoms of the cookies to over-bake.
  • Use a cookie scoop to ensure that each cookie is the same size and shape, resulting in even baking and a more uniform appearance.
  • Don't overbake! Overbaking drop cookies can result in dry, crumbly cookies. Take them out of the oven when they are still pale around the edges and still soft in the center. They will continue to cook on the hot baking sheet for a few minutes after you take them out of the oven.
  • Cool the cookies on a wire rack rather than on the baking sheet. This will prevent them from becoming soggy from the residual heat and moisture on the baking sheet.
