Seeded Apricot & Coconut Granola

Seeded Apricot & Coconut Granola
- 2 Cups Oats
- ½ cup Pumpkin Seeds
- ½ cup Sliced Almonds
- ¼ cup Unsweetened Coconut Flakes
- ¼ cup Sunflower Seeds
- Zest From 1 Orange
- ⅓ cup Avocado Oil or any neutral tasting oil
- ½ teaspoon Orange Blossom Water
- ¼ cup Honey
- 1 teaspoon Salt
- 1 Cup Dried Apricots Chopped
Preheat Oven to 350° F and line a baking sheet with parchment paper - then set aside.
Add oats, pumpkin seeds, sliced almonds, coconut flakes and sunflower seeds into a bowl and mix well.
2 Cups Oats , ½ cup Pumpkin Seeds, ½ cup Sliced Almonds , ¼ cup Unsweetened Coconut Flakes , ¼ cup Sunflower Seeds
Add orange zest, avocado oil, orange blossom water, honey and salt on top of the dry ingredients and mix using a spatula until everything is well coated.
Zest From 1 Orange, ⅓ cup Avocado Oil , ½ teaspoon Orange Blossom Water, ¼ cup Honey , 1 teaspoon Salt
Spread mixture evenly onto a large baking sheet and place in the preheated oven. Bake for 25-30 minutes, mixing every 10 minutes to ensure that the granola is evenly browning.
Allow granola to cool completely before mixing in the chopped apricots and storing in an airtight container!
