Notes

Tips to make the best gin fizz
  • When shopping for passion fruit, look for fruit that is dark purple or deep red/yellow with wrinkly skin. To ripen, let it sit at room temperature for a few days.
  • Feel free to use more or less simple syrup to your liking. You can also omit it altogether.
  • It’s crucial that you dry shake the cocktail ingredients first to fully emulsify the egg white.
  • Strain the gin fizz ASAP after shaking with ice. No one likes a watered-down cocktail!
Frequently asked questions
  • How do you process passion fruit for cocktails? First, slice the fruit in half and spoon out the pulp. Next, press the pulp through a fine-mesh strainer over a bowl to reserve the puree. Repeat until most of the puree is released. Set the pulp aside for garnish.
  • Where can you find passion fruit puree? If you don’t want to process the passion fruits yourself, you can buy bottled passion fruit puree or passion fruit juice cocktail year-round.
  • Can you make a gin fizz without egg whites? To make an egg-free gin fizz, you can use the water from a can of chickpeas (aquafaba). For each egg white, use 2 tablespoons of chickpea water. You can also omit the egg white entirely, but your cocktail won’t be as fizzy (it’ll be similar to a Tom Collins).
