    My Brioche Sandwich with Egg Salad is the epitome of an artfully crafted sandwich. It's light and lovely, ideal for a weekend brunch, a ladies lunch, or as a sophisticated addition to your tea time spread, made with just 10 simple ingredients ! During pastry school, I learned how French brioche which can turn even the simplest fillings into something delicious —and this recipe proves it.

    Ingredients needed to make a brioche sandwich.

    As promised, you only need a handful of ingredients to make these brioche bread sandwiches. Here’s what to grab:

    • Hard-Boiled Eggs - If possible, make your own hard-boiled eggs at home rather than purchasing the pre-boiled kind at the store. The flavor is always so much better!
    • Celery - For much-needed crunch. Pro Tip: If you hate the stringiness of celery, feel free to peel the outside layer before chopping.
    • Dill & Parsley - I definitely advocate for using fresh herbs for the brightest flavor and a pop of color. That said, feel free to use ⅓ as much if you opt for dried. 
    • Mayonaise - If you haven’t yet hopped on the Kewpie train, now’s the time. This Japanese mayo has more egg yolks than American mayo, resulting in a richer, custardier consistency and a slightly sweeter flavor that pairs beautifully with eggs.  
    • Dijon Mustard - For a pop of tang and spice. If you’d like a bit more texture, consider using half smooth mustard and half whole grain mustard.
    • Lemon - For brightness. You’ll need both the zest and juice, so follow the proper order of operations: first, roll on the countertop for 10-15 seconds. Next, wash and dry it. Third, zest it using a microplane, grabbing only the bright yellow parts and avoiding the white pith. Finally, slice it open and juice it.
    • Salt & Pepper - Basic seasoning is all you need for an egg salad this lovely. 
    • Butter Lettuce - For more veggies, a hint of color, and another layer of texture. The round, cupped shape also helps to contain the egg salad within the confines of the bread. Little Gems also work!
    • Brioche Bread - The star of our recipe. Making sandwiches with brioche bread you baked yourself is quite possibly the highest form of self-care I can think of!

    ⏲️ Substitutions & Variations

    At the end of the day, you can make a brioche bread sandwich dozens upon dozens of ways. While I love my egg salad version, feel free to get creative! Here are some ideas to get you started:

    • Any Fillings You Want! There are a ton of brioche sandwich fillings to choose from. Make a brioche chicken sandwich with some tarragon chicken salad, or a brioche breakfast sandwich with a fried egg and crispy bacon, or even a fancy PB&J with homemade nut butter and fruit preserves! 
    • Toasted - While I love the soft, pillowy texture of untoasted brioche sandwich bread, it’s also quite delectable when toasted — particularly with a swipe of butter! 
    • Dessert Sandwich - Who says sandwiches are only savory? Use my Chocolate Chip Brioche as your base, then add a swipe of your favorite berry jam, and top with a few squares of high quality dark chocolate. Close the sandwich up, then toast in a pan with butter until the bread is golden and the chocolate is all melty. Delicious!

    📖 How To Make A Sandwich With Brioche Bread: Step-by-Step Instructions

    Making an egg salad sandwich with brioche is a snap. Here’s how it’s done:

    Step 1: Hard Boil Your Eggs. Place eggs in a saucepan and cover with enough water so they're fully submerged. Boil, then reduce the heat and let simmer for about 10 minutes.

    Step 2: Ice Bath & Peel. After boiling, place the eggs in cold water to stop the cooking process. Peel your eggs and set aside.

    Step 3: Slice & Chop Eggs - Cut your eggs into small pieces, or press your eggs through a clean cooling rack for ease!

    Step 4: Mix - Mix ingredients together until well combined. The consistency should be creamy but still have some chunks of egg.

    Step 5: Assemble. Lay a couple of butter lettuce leaves on one slice of bread. Spread a generous amount of egg salad over the lettuce.

    • Perfecting the Egg Salad: The key to a delicious egg salad is in how you cook the eggs. Aim for firm yet creamy yolks and avoid overcooking, as this can lead to a chalky texture. Gently folding the chopped eggs with the other ingredients ensures the perfect texture, as opposed to mashing it to oblivion. 
    • Serve It Fresh: To maintain the perfect brioche texture, it's important to eat the sandwich soon after assembly. If you want to make your co-workers jealous, I suggest packing the egg salad and butter lettuce in one container (using the lettuce like a cup holder for the salad) and the brioche in another. When it's time to eat, use the lettuce like handles to assemble the sandwich!

    Is brioche healthier than white bread?

    First, let me say that I'm a food lover and eating expert, but I'm not a nutrition expert! If you need diet advice, I'm not your gal. What's "healthy" to one person isn't necessarily "healthy" for another! 

    However, I can tell you that brioche is typically higher in fat and calories than white bread thanks to the addition of butter and eggs. However, when you make brioche at home, you have the advantage of creating a more natural product, free from the additives and preservatives commonly found in store-bought breads. So, which is healthier? I'm gonna let you decide. 😉

    Is brioche good for sandwiches?

    Absolutely! Making sandwiches is just one of the many uses for brioche bread, but it’s definitely high on my list of favorites. With a light, fluffy texture and mildly sweet taste, it’s ideal for everything from breakfast sandwiches to tea sandwiches and PB&Js.

    How should I store leftovers?

    I suggest keeping fresh brioche at room temperature in a bread bag or bread box for up to 2-3 days. If you want to keep it longer, you should slice it first, pop it in a plastic bag, and freeze it for up to a month. When you’re ready for a slice, simply pop it in the toaster or toaster oven to either warm it or toast it to your liking.

    For egg salad, I suggest keeping it in an airtight container in the fridge for no more than 3 days.

    Ingredients

    • 10 Eggs
    • ½ cup Mayonaise, kewpie is my favorite!
    • 2 teaspoons Dijon mustard
    • 1 Lemon , 1 teaspoon juice & zest of one lemon
    • 1 tablespoon Chopped Dill
    • ½ cup Chopped Celery
    • 1 tablespoon Chopped Parsley
    • Salt and pepper, to season
    • 2 Slices Brioche Bread
    • 2 Pieces Butter lettuce

    Instructions

    • Start by hard boiling your eggs. Place eggs in a saucepan and cover with enough water so they're fully submerged. Bring the water to a boil, then reduce the heat and let simmer for about 10 minutes.

    • After boiling, place the eggs in cold water to stop the cooking process.
    • Peel the boiled eggs and chop them into small pieces.
    • In a bowl, combine the chopped eggs with mayonnaise, a dash of dijon mustard, lemon zest, lemon juice, chopped dill, celery, parsley, salt and pepper to taste.
      ½ cup Chopped Celery, 1 tablespoon Chopped Dill, 1 tablespoon Chopped Parsley, ½ cup Mayonaise, 2 teaspoons Dijon mustard, Salt and pepper, 1 Lemon
    • Mix everything together until well combined. The consistency should be creamy but still have some chunks of egg.
    • Slice your brioche bread if it’s not pre-sliced. You can lightly toast the slices if you prefer a bit of crunch.

    • Lay a couple of butter lettuce leaves on one slice of bread.
      2 Pieces Butter lettuce
    • Spread a generous amount of egg salad over the lettuce.Top with the second slice of brioche bread.
    • Cut the sandwich in half if desired, and enjoy!
