⭐ Why You’ll Love This Brioche Garlic Bread Recipe
- Quick & Easy - Making sliced bread garlic bread is a snap, especially if your bread is already sliced. With my method, you’ll have deliciously flavorful toast ready in less time than it takes to scroll through your TikTok feed.
- Garlicky, Buttery, Cheesy Perfection - The combination of fresh garlic, a duo of allium powders, fresh herbs, parmesan cheese, and butter is impossible to beat — especially when it’s broiled atop homemade brioche sliced bread.
- Tender & Soft - Don’t get me wrong. I love a good, crusty slice of sourdough garlic bread. But there are times (like when I’ve just eaten half a box of Cap’n Crunch and the roof of my mouth feels like a cat scratching post 🤷🏻♀️) when I don’t want to have to work for it. This garlic brioche bread yields under the gentlest of bites and is utterly sublime.
🍴Ingredients
- Garlic Cloves - Fresh garlic is key to the pungent, almost spicy flavor I associate with good garlic bread. Feel free to swap in jarred minced garlic or garlic paste (e.g. Dorot cubes) to save some prep time. Note that if you use pressed or mashed garlic, you’ll lose out on some of the texture.
- Mustard - Dijon, British “French” mustard, or American-style yellow mustard will all do the trick. You can also use ground mustard powder in a pinch.
- Onion Powder & Garlic Powder - These pantry superstars add the sweet flavor of cooked alliums without actually needing to cook anything.
- Parmesan Cheese - Make sure to grate your own for the best flavor and meltability!
- Unsalted Butter - If possible, cultured, organic, and/or grass-fed European-style butter is the way to go.
- Fresh Rosemary - I love the woodsy flavor of fresh rosemary, but you can use other fresh herbs like spicy oregano or minty thyme if you prefer.
- Fresh Parsley - In my world, lemony parsley is a must for garlic bread. If you don’t have any fresh, you can use a scant 2 tablespoons of dry.
- Brioche Bread - Using homemade bread for garlic bread is a serious kitchen flex, but feel free to use fresh, store-bought bread if needed.

⏲️ Substitutions & Variations
- Dairy-Free - While I haven’t cracked the code on making vegan brioche, you can avoid the dairy by using plant-based butter.
- Substitute for Brioche Bread - If you want a similar flavor and texture of this garlic bread brioche but are missing the brioche, you’re welcome to use any other soft, enriched bread like challah, sourdough bread or Japanese milk bread. Texas toast is also pretty good!
- Garlic Butter Mixture Magic: For that delectable, buttery garlic bread, mix real butter, tons of grated garlic, and a touch of olive oil at low speed in a large bowl until fully combined.
- Cheesy Delight with Mozzarella Cheese: Elevate your simple recipe to cheesy garlic bread by adding a generous layer of shredded mozzarella cheese over your butter-slathered brioche slices. Bake until the cheese is beautifully melted and bubbly, creating a mouthwatering contrast between the soft garlic bread interior and the crispy, golden crust—a must-try twist on the classic.
- Garlic Bread Buns: Spreading this garlic mixture generously on thick slices of brioche buns not only infuses them with a deliciously rich flavor but also guarantees a moist, fluffy bread interior with a slightly sweet flavor.

👩🏻🍳 Expert Tips
- Did you forget to leave your butter out to soften? Not to worry. You can get it to room temp right quick by microwaving it at 30% power for about 30 seconds. (Note that microwave power varies by wattage, so your time may be more or less. I use an 800-watt microwave.)
- The thickness of your bread slices will determine how soft your garlic brioche toast ends up. If the slices are thin, it’ll end up a bit crispier. If they’re thick like Texas toast, you’ll have more fluffiness underneath.
- To ensure your brioche garlic bread slices achieve that irresistible golden brown finish, use a baking sheet lined with parchment paper or aluminum foil. This makes cleanup a breeze—ideal for this easy garlic bread recipe that's sure to become a star side dish at your dinner table!
💭 Recipe FAQs
Heck yeah, brioche makes FANTASTIC garlic bread. That said, there are lots of tasty bread choices depending on the vibe you’re going for.
Off the top of my head, I can’t think of a savory Italian dish that wouldn’t pair nicely with garlic bread. In fact, I can’t really think of any savory dish PERIOD that wouldn’t benefit from a side of this buttery, garlicky goodness.
Brioche has been around since long before stand mixers were a thing, so yes. You can make it without a mixer. Just be prepared to get a good arm workout in the process.
Brioche is a type of white bread, but it tends to be sweeter, richer, and softer than the white sandwich bread most of us think of. This is due to brioche having more fat from the butter and eggs.
I’d say challah or milk bread are the closest.
You’re welcome to make the garlic butter in advance — it will keep well in an airtight container in the fridge for 1-2 weeks, or in the freezer for up to 3 months. That said, garlic bread is best right out of the oven while the edges are crisp, the cheese is all melty, and the bread is extra soft.
If you have any leftovers, you can keep them in an airtight container for a day or two. Reheat them in a toaster oven or oven set to 200F to help restore some of their glory.
