I recommend using a doughnut pan for the best results, but keep scrolling to learn how to make baked doughnuts without one.
The ingredients you need are quite simple - here's what to pick up at the grocery store:
- Vanilla sugar - To make vanilla sugar from scratch, you’ll need granulated sugar and whole vanilla beans. Vanilla beans add a rich caramel-like flavor to each bite.
- Leavening agents - These cake doughnuts are made with baking powder, baking soda, and salt instead of yeast. When these three come together, they act as leavening agents and help the doughnuts rise and become soft and fluffy.

These vanilla baked doughnuts are much easier to make than fried doughnuts. Here’s how it’s done:
To make homemade vanilla sugar:
Step 1: Combine vanilla and sugar. Slice the vanilla beans in half lengthwise and scrape out the insides. Then, place the scraped vanilla and sugar in a food processor and process for a few minutes.
Step 2: Strain and store. Pour the vanilla sugar through a mesh strainer to catch any pieces of vanilla beans. Store in an airtight container until you’re ready to make the doughnuts.
To make vanilla doughnuts:
Step 1: Whisk wet and dry ingredients. Whisk the all purpose flour, baking powder, salt, and baking soda in a small bowl. Next, whisk the butter, egg, vanilla bean sugar, milk, vanilla extract, and sour cream in another large bowl until thoroughly combined.
Step 2: Combine wet and dry mixtures. Add the dry mixture to the bowl with the wet ingredients and stir to combine.
Step 3: Bake the doughnuts. Using a piping bag, pastry bag or ziplock bag, pipe the donut batter into your greased donut cavities in the pan. Transfer to the oven and bake. When they’re done, let the doughnuts cool completely on a wire rack or cooling rack before glazing.
Step 4: Make the glaze. Whisk the powdered sugar, rose water, and milk together in a shallow bowl.
Step 5: Glaze and decorate doughnuts. Dip the tops of the baked donut into the glaze, letting any excess drizzle down the sides. Then, drizzle with white chocolate and top with rose petals. Enjoy!

- ¼ teaspoon Baking Soda
- 2 tablespoon (30 g) Unsalted Butter, Melted and Cooled
- 1 Large Egg
- ⅓ Cup (66 g) Vanilla Bean Sugar
- ½ Cup (120 g) Whole Milk
- 1 teaspoon Vanilla Extract
- ½ Cup (125 g) Sour Cream
Rose Icing & Garnish
- 1 Cup (120 g) Powdered Sugar
- 2 teaspoon Rose Water, optional
- 1 tablespoon (75 g) Milk
- ¼ Cup (33 g) White Chocolate, Melted
- Dried Rose Petals, For Garnish
- ¼ Cup (33 g) White Chocolate, melted, for final drizzle

Vanilla Bean Sugar
- Cut vanilla beans in half lengthwise to expose the interior of the beans and scrape out the interior.2 Vanilla Beans
- Place vanilla beans and sugar in a food processor and turn on for 2-3 minutes1 Cup Granulated Sugar
- Pour the finished vanilla sugar through a mesh strainer in order to get rid of any leftover vanilla bean pods before storing in an airtight container.

- First off, preheat your oven to 350 degrees F before making your doughnut batter.
- In a medium bowl whisk together the flour, baking powder, salt, and baking soda and set aside.2 Cups All-Purpose Flour, 2 teaspoon Baking powder, ½ teaspoon Salt, ¼ teaspoon Baking Soda
- Then in a larger bowl, whisk together the butter, egg, vanilla bean sugar, milk, vanilla extract and sour cream mixing together until everything has fully combined.2 tablespoon Unsalted Butter, 1 Large Egg, ⅓ Cup Vanilla Bean Sugar, ½ Cup Whole Milk, 1 teaspoon Vanilla Extract, ½ Cup Sour Cream
- Add the dry ingredients to the wet ingredients until combined.
- Next, it’s time to pipe the doughnut batter into your doughnut baking pan. Spray the donut pan with a light layer of non-stick cooking spray.
- Pipe the doughnut batter into your doughnut pan filling just over halfway, then place the tray in the oven to bake for 11-12 minutes. After the doughnuts pass the toothpick test, remove from the oven and let cool on a baking tray. Do not glaze doughnuts until they have completely cooled.
- Whisk together powdered sugar, first ¼ cup of melted white chocolate, rose water, and milk in a medium bowl to make your glaze. Dip the tops of the doughnuts into the glaze, allowing the excess to drip off.
