    As promised, you only need a handful of ingredients to make this tomato and creamy burrata bruschetta and burrata mash-up. Here’s what to grab:

    • Baguette - Opt for a slender loaf with a crusty exterior to make the best crostini.
    • Ball of Burrata Cheese - You should be able to find fresh mozzarella’s more sophisticated cousin in the refrigerated specialty cheese section next to where you’d find bocconcini. 
    • Cherry Tomatoes - Grape tomatoes also work!
    • Fresh Basil - If you’re grocery shopping a few days ahead, remember that unlike other herbs, fresh basil does not like the fridge. Simply snip off the bottom ¼ inch of stem, then pop it into a glass of water on the countertop.
    • Extra-Virgin Olive Oil - If you have it, now’s the time to bust out your fancy finishing oil.
    • Balsamic Glaze - You can either buy this at the store, or make your own by gently simmering balsamic vinegar with a touch of sugar until thick and syrupy.
    • Salt & Pepper - Basic seasoning is all you need when you have so much flavor happening on the plate!

    While this simple burrata dish is a fun twist on regular bruschetta, there are still plenty of ways for you to make it your own. Here are a few ideas to get you started:

    • Go Spicy. Rub the toasted crostini with a clove of roasted garlic to impart some sharp, allium heat to the mix. 
    • Use Sourdough Bread slices, Italian bread, or the crusty bread of your choosing as an alternate option! This easy appetizer recipe can be made with thick slices of bread or thin slices, depending on your preference - you could even make a burrata toast!
    • Make it Gluten-Free. Swap in the crusty GF bread of your choosing for this cherry tomato bruschetta. 
    • Nix the Tomatoes. You know what else goes great with burrata and basil? PEACHES. Don’t knock it till you try it! But, unlike cherry tomatoes, peaches should only be eaten in peak season — from late June to mid-August here in the US.

    Tomato burrata bruschetta might taste like a delicacy, but whipping it up is a snap. Here’s how to make this delicious appetizer:

    Step 1: Make Crostini. Drizzle some olive oil over the slices and season them with a pinch of salt and pepper. Toast them in the preheated oven on a rimmed baking sheet for about 5-7 minutes, or until they turn golden brown and crispy.

    Step 2: Wash and Halve the cherry tomatoes while your bread is toasting. Gather your olive oil, balsamic glaze & salt and pepper.

    Step 4: Assemble. Take a toasted crostini and place a generous dollop of burrata cheese on top. You can tear the burrata into pieces and arrange it over the toasted bread slices.

    What is burrata made of?

    The outer layer of burrata is typically made from fresh mozzarella cheese. Mozzarella is known for its stretchy, elastic texture and mild, milky flavor. This layer forms a delicate pouch that holds the creamy center.

    The pièce de résistance of burrata lies within its mozzarella shell – the creamy, rich center. To create this luscious filling, a mixture of cream and stracciatella (small shreds of mozzarella) is gently placed inside the mozzarella shell. As a result, when you cut into burrata, the cream spills out, creating a luxurious contrast to the firmer outer layer.

    Is bruschetta bread hard or soft?

    Generally speaking, bruschetta bread is toasted until it's crispy and golden on the outside while retaining a slightly softer texture on the inside. The crispy-tender contrast is a key element of bruschetta's appeal! It allows the bread to hold up well under the weight of various toppings, like the juicy tomatoes, fresh basil, and creamy burrata, while still being easy to bite into.

    How should I store leftover burrata bruschetta?

    If possible, don’t assemble the burrata bruschetta until you’re ready to serve. Feel free to make the crostini up to a day or so ahead and keep them in a sealed zip-top bag (preferably with an extra silica packet) so you’re ready to go when the party starts. 

    If you do have any leftovers, you can transfer them to a clean container and keep them in the fridge for a day or two. Just note that the bread will become a bit soggy if you do. To serve any leftovers, I suggest letting the tomatoes come to room temperature first.

    Ingredients
     

    • 1 Baguette
    • 3 Tablespoons Olive oil
    • 1 cup Cherry tomatoes, sliced
    • 2 balls Burrata
    • 10 leaves Fresh basil, chopped
    • 1 Tablespoon Balsamic glaze
    • Salt and pepper

    Instructions

    • Start off by preheating your oven to 375°F
    • Place the angled rounds of baguette on a baking sheet. Drizzle some olive oil over the slices and season them with a pinch of salt and pepper. Toast the baguette rounds in the preheated oven for about 5-7 minutes, or until they turn golden brown and crispy. Keep an eye on them to prevent burning!
      1 Baguette, 3 Tablespoons Olive oil
    • Wash the cherry tomatoes and cut them into halves while your bread is toasting.
      1 cup Cherry tomatoes
    • Once the baguette rounds are toasted and the cherry tomatoes are ready, it's time to assemble the bruschetta. Take a baguette round and place a generous dollop of burrata cheese on top. You can tear the burrata into pieces and arrange it over the bread.
      2 balls Burrata
    • Now, add a few roasted cherry tomato halves over the burrata. Tear some fresh basil leaves and scatter them over the top. Then, lightly drizzle a touch of olive oil and balsamic glaze on top for a touch of sweetness and tanginess.
      10 leaves Fresh basil, 1 Tablespoon Balsamic glaze
    • Finally, season the burrata bruschetta with a pinch of salt and freshly ground black pepper. Arrange the bruschetta on a serving platter and garnish with a few whole basil leaves for an attractive presentation.
