From moistening cake layers to flavoring whipped cream, mixing up cocktails to playing barista, there’s no shortage of delicious ways to put this flexible all-star to work.

    This light and lovely lavender-infused honey simple syrup recipe is the latest addition to my ever-growing list of lip-smackingly delicious flavor boosters, and I have a feeling you’re going to become as enthralled by it as we are. Iced tea, honey lavender lattes, lavender martini or even in ice cream - this is an easy recipe that parallels any coffee shop beverage!

    As promised, you only need a handful of ingredients to make this honey lavender syrup recipe. Here’s what to grab:

    • Water - If possible, opt for filtered water for the best taste.
    • Honey - I definitely recommend scoping out the local honey selection at your farmer’s market or specialty food shop. Supporting local hives isn’t just good for your local farming environment; it is also generally much tastier and more complex than purchasing bulk honey from the supermarket. Choose the kind of honey you enjoy! Clover honey, orange blossom honey would be a great choice here - delicious addition to a homemade lavender soda. 
    • Culinary Lavender - Make sure you’re grabbing dried flowers that are safe for human consumption. If you’re not looking to buy a ton, try grabbing plain lavender tea - one of my favorite beverages!

    ⏲️ Substitutions & Variations

    • Vegan - Use a vegan honey substitute like golden syrup or homemade apple “honey” to keep this delightful syrup safe for your plant-based pals. You can also use maple syrup - delicious in a morning coffee. 
    • Different Flowers - The great thing about honey is it plays nicely with just about any edible flower you can think of. Consider swapping in rosehips or dried violets instead!
    • Cinnamon Honey Syrup - While lavender is lovely for the first blush of spring, consider making a cozy honey cinnamon syrup for cooler weather. Just swap out the lavender in favor of cinnamon sticks!

    📖 How To Make Honey Lavender Syrup: Step-by-Step Instructions

    This lavender honey recipe comes together in a snap. Here’s how:

    Pouring water and honey into a small saucepan.

    Step 1: Dissolve. Add your equal parts cup of water and honey into a small saucepan and heat on medium-high heat while stirring. Heat water and keep stirring until you see that the honey dissolves into the water.

    Step 2: Steep. Add dried lavender buds into the warm/hot honey syrup and stir so that the lavender is coated in the syrup.

    Step 3: Infuse - Allow the syrup to infuse for 30 minutes to an hour.

    Step 4: Strain out the lavender with a fine mesh strainer into a glass jar or airtight container.

    As I mentioned earlier, there’s no shortage of inventive and tasty ways to put this liquid gold with floral notes to good use. Here are some of my favorites that include a lovely taste of lavender: 

    • Honey Lavender Cupcakes or Honey Lavender Cake - Use this floral honey syrup to soak your cake layers, add delicious lavender flavor to your buttercream frosting or whipped cream, or infuse the cake batter with a light, springy flavor profile.
    • Honey Lavender Cookies - Use the syrup to add some honey goodness to my lavender white chocolate macarons or lemon lavender cookies
    • Lavender Honey Latte or Honey Lavender Coffee - Using honey lavender syrup for coffee might sound farfetched, but it’s truly delightful. If you liked my lavender latte or rose milk vanilla chai, I have a feeling you’ll love having this lavender coffee syrup on hand.
    • Honey Lavender Lemonade - Add a touch of spring-inspired flavor to your favorite non-alcoholic pitcher drink by swapping in honey lavender simple syrup for plain.

    Yep, you’ll want to keep your honey simple syrup in the fridge to prevent it from growing mold. Most simple syrups will last upwards of 10 days in the fridge. If you’d like to extend the shelf-life, consider freezing it for up to 6 months. 

    How do I know if I’m buying real honey, not just corn syrup flavored like honey?

    Purchasing it directly from an apiarist at the farmer’s market is a surefire way to ensure your honey is the real deal. And, while corn syrup-tainted honey used to be a much more widespread problem, that no longer seems to be the case. So long as you’re buying from a reputable brand that only lists “honey” on the ingredients list, you should be good. 

    Can I use honey that has crystallized?

    Yep! One of the most marvelous things about honey is that it will last indefinitely. Crystallization is a natural process (and is a great indication that you’re working with 100% real honey!), but it can easily be reversed by gently warming the honey in a pot of warm water.
