    Lavash Wrap (Quick & Healthy Lunch!)

    This Lavash Wrap brings turkey, hummus, goats cheese, avocado, and crisp vegetables together in a soft flatbread. It’s an easy and flavorful handheld lunch or quick Mediterranean dinner!

    Lavash bread as a wrap

    Looking for a quick, no-nonsense lunch? This Lavash Wrap brings lunchtime classics, like turkey cold cuts, goat cheese, and a vibrant blend of veggies and greens in lavash bread. The bread is soft and the fillings are flavorful!

    Lavash bread is traditionally eaten with cheese, kebab, and Mediterranean dips like baba ganoush, hummus, and tzatziki. It’s also the perfect vessel for your favorite wrap fillings and sandwich toppings, just like pita bread. Enjoy the extras with gyro, falafel, kebab, dips, and more. And think of the fillings - you could add feta cheese, red onion, red pepper, creamy hummus, persian cucumbers - the list could go on!

    Baking lavash from scratch is relatively simple, but storebought lavash works in this wrap too. While it’s delicious for lunch, this wrap is also a convenient and crowd-pleasing appetizer. Roll the bread up tight with the fillings intact, slice into thick rounds, and voila - turkey pinwheels!

    What is lavash?

    Lavash is a soft and thin flatbread from Armenia. Just like naan and pita bread, lavash is pliable, soft, lightly crisp, and tangy.

    The traditional way to cook lavash dough is to roll it thin and bake it in a tonir (an Armenian underground clay oven) for just a few seconds. Nowadays, it’s mostly done under the broiler in the oven or in a warm skillet.

    There are so many options to add as fillings for your lavash wrap! Here are some of my favorites:

    • Lavash bread - Homemade lavash is easy to make at home with very few ingredients. If you don’t want to make it yourself, you should be able to find a package of storebought lavash from most major grocery stores or Armenian markets. I find mine at Trader Joe's! The lavash pieces are cut into a rectangular shape, making it easy to use an entire lavash sheet for your wrap.
    • Goat cheese - Goat cheese is a soft and spreadable cheese made from goat’s milk. It’s a creamy alternative to other spreads you’d find in vegetarian wraps, like hummus, tzatziki, and baba ganoush. If you don’t have goats cheese at home, cream cheese, feta, ricotta, Boursin or labneh would make excellent substitutes. 
    • Lettuce - Butter lettuce is my favorite, but you can use bibb, red leaf, green leaf, arugula, or spinach instead.
    • Turkey - Use deli turkey slices, leftover Thanksgiving turkey, or lunchmeat turkey. Anything goes!
    • Avocado - Because turkey and avocado belong together in wraps and sandwiches.
    • Pickled onions - Pickled red onions are tangy, crunchy, and really easy to make at home. They’re what make every bite of this turkey wrap pop! Plus, their flavor isn’t as intense as raw onions, meaning everyone will enjoy them.
    • Roasted red peppers - For a smoky, tangy element. Raw bell pepper works too. 
    • Microgreens or sprouts - This is your final layer of nutrient-dense veggies, then you’re ready to roll.

    Equipment

    • Chef’s Knife - For slicing the veggies and cutting the wrap in half.
    • Butter Knife - It’s all you need to spread a layer of goats cheese over the lavash bread.

    How to make a lavash wrap

    After making homemade lavash (or buying a package of lavash bread), you’re ready to make these lunch wraps:

    Step 1: Spread the cheese. Lay the lavash bread on a flat surface and add a scoop of goats cheese in the middle. Spread it out to the edges.

    Step 2: Add the filling. Lay the lettuce, turkey, avocado, pickled onions, and roasted peppers on top of the cheese. Finish with the microgreens or sprouts. 

    Step 3: Roll it up and enjoy. Starting from the bottom, roll the lavash away from you into a tight wrap. Use a sharp knife to cut in half and serve.

    Variations

    You’re bound to have extra lavash laying around, so why not use it for more creative meals? Here are a few more ways to stuff and serve the wraps:

    • Picnic-ready wrap sandwiches - Wrap creamy chicken salad or tuna salad in the lavash for your next picnic or road trip!
    • BLT lavash - Roll up crispy bacon, lettuce, tomato, and mayo.
    • Breakfast burrito - Wrap up fluffy scrambled eggs with cheese, cooked sausage crumbles, homemade pesto, and crispy potatoes. 
    • Vegetarian option - Spread the lavash with hummus, fill it with your favorite fresh vegetables, use plant-based deli meats, or stuff the bread with this Panzanella salad with mozzarella. 
    • Dessert lavash - Spread the bread with almond butter or chocolate hazelnut butter and sprinkle sugar or cinnamon sugar over top. Add a layer of sliced bananas and chocolate chips, then roll it up tightly and warm in a pan over medium heat until the lavash is lightly toasted and the chocolate is warm and gooey.

    Storing

    To make ahead: If you plan on eating these wraps for lunch throughout the week, refrigerate the veggie fillings, turkey, and goat cheese in separate containers. This makes it easy to grab exactly what you need and assemble the wraps in no time. Enjoy your wrap immediately while the ingredients are firm and crisp.

    To store: Keep the bread wrapped on the counter and enjoy it within 1 week. 

    Frequently asked questions

    What’s the difference between pita and lavash?

    The most significant difference is in the ingredients. Lavash can be leavened with old dough (similar to sourdough starter) or unleavened and made with just flour, water, and salt. Pita bread, on the other hand, is more puffy than flat, leavened, and made with wheat flour. 

    Can I heat my lavash wrap?

    Yes! If you prefer it warm, place the tightly rolled wrap seam side down on a hot panini press, grill pan, or cast iron pan and toast on both sides.
