When the weather warms up and the kitchen gets way too hot, I reach for a Matcha Tonic—a bold, bubbly, and ultra-refreshing way to stay caffeinated. Back when I was working as a pastry chef in San Francisco, this drink was a favorite pick-me-up, offering the perfect balance of earthy matcha and crisp tonic water.

Matcha and tonic might sound like an unexpected pairing, but trust me—it works. The bitterness of tonic water enhances matcha’s natural grassy notes, creating a drink that’s complex, refreshing, and not too sweet. It’s an energizing alternative to coffee, lighter than a matcha latte, and perfect for warm days when you want something fizzy and flavorful.
If you love matcha but want to switch things up from the usual lattes and iced coffees, this is the perfect option. It has the same gentle caffeine boost that keeps you going, but with a crisp, slightly bitter edge that makes it even more refreshing. Plus, it’s incredibly easy to make—just three ingredients and a quick whisk!
Why You’ll Love This Recipe
- Refreshing & Light – Bubbly, slightly bitter, and perfect for hot days. A glass would be ideal alongside a raspberry ice cream sandwich on a summer afternoon!
- Naturally Energizing – Matcha powder provides a steady caffeine boost without the crash! I personally love using Meiko from Matchaeologist or Sayaka from Ippudo Tea for my matcha recipes.
- Sophisticated & Complex – The bitterness of tonic water brings out matcha’s depth of flavor.
- So Easy to Make – Two ingredients, no fancy equipment needed! (An espresso Tonic is also a great alternative if you have extra Tonic on hand!)
How to Make a Matcha Tonic
There's just a few steps before you're sipping on this refreshing combo of tonic water and matcha!

Matcha-Making Tips
To get the best flavor and texture, follow these matcha-making essentials:
- Choose High-Quality Matcha: Look for ceremonial-grade matcha that’s bright green and smooth in taste—this will prevent any bitterness from overpowering the drink.
- Always Sift Your Matcha: Matcha clumps easily, and sifting it before whisking ensures a silky-smooth texture.
- Whisk It Properly: Use a bamboo whisk (chasen) or an electric frother, whisking in a zigzag motion (not circular) to create a frothy, even mixture.

How to Customize Your Matcha Tonic
One of the best things about this drink? It’s so easy to personalize! Here are a few fun ways to switch it up:
- Flavored Ice Cubes – Freeze tonic water with lemon zest or edible flowers for a slow-releasing flavor boost. Or for an extra boost of caffeine? Coffee ice cubes!
- Citrus Twist – Add a splash of grapefruit juice, yuzu, or lime for extra brightness.
- Sweeten It Up – If you prefer a touch of sweetness, stir in some honey syrup, vanilla syrup, or strawberry syrup.
- Garnish It Beautifully – Try a twist of lemon peel, sugared berries, a sprig of rosemary, or fresh basil for a gorgeous finish.
- Experiment with Tonics – Swap classic tonic for cucumber, elderflower, or grapefruit tonic for a new flavor experience. Fever tree tonics are some of my favorite to try!
